Eating to Support Energy, Not Drain ItCoconut, Lime and Ginger Chicken with Sweet Potato

Ingredients
4 organic chicken thighs or breasts, chopped
1 large sweet potato, peeled and cubed
1 tin full fat coconut milk
1 tablespoon fresh ginger, grated
2 cloves garlic, crushed
1 teaspoon ground turmeric
Zest and juice of 1 lime
1 tablespoon olive oil or coconut oil
Sea salt/Celtic Salt to taste
Fresh coriander to finish
Method
Heat the oil gently in a large pan and lightly brown the chicken.
Add the garlic, ginger, and turmeric and stir until fragrant.
Add the sweet potato and coconut milk. Bring to a gentle simmer.
Cover and cook for 20 to 25 minutes until the sweet potato is soft and the chicken is cooked through.
Finish with lime zest and juice.
Season with sea salt and add fresh coriander before serving.
