Ingredients:
4 medium organic beetroots, peeled and diced
4 medium organic carrots, peeled and sliced
2 tablespoons extra virgin organic olive oil

1 tablespoon organic honey or maple syrup
1/4 cup fresh organic parsley, chopped
1/4 cup organic walnuts, toasted and chopped
1/4 cup crumbled organic goat cheese (optional)

Instructions:
Roast the Vegetables:
