Menopause Nourishment: August Delight ~ Roasted Beetroot and Carrot Salad


Celebrate August's bounty with this vibrant and nourishing Roasted Beetroots and Carrot Salad. Packed with essential nutrients, this recipe is ideal for supporting menopause health, offering anti-inflammatory benefits, and promoting overall wellness with seasonal organic ingredients.


Ingredients:


  • 4 medium organic beetroots, peeled and diced

  • 4 medium organic carrots, peeled and sliced

  • 2 tablespoons extra virgin organic olive oil

  • 1 tablespoon organic balsamic vinegar

  • 1 tablespoon organic honey or maple syrup

  • 1/4 cup fresh organic parsley, chopped

  • 1/4 cup organic walnuts, toasted and chopped

  • 1/4 cup crumbled organic goat cheese (optional)

  • Celtic/Rock Salt and black pepper to taste


For the Dressing:


  • 3 tablespoons extra virgin organic olive oil

  • 2 tablespoons organic apple cider vinegar

  • 1 tablespoon organic Dijon mustard

  • 1 teaspoon organic dried thyme

  • 1 teaspoon organic honey or maple syrup

  • Celtic/Rock Salt and black pepper to taste


Instructions:


Roast the Vegetables:

Preheat your oven to 425°F (220°C). On a large baking sheet, toss the diced beets and sliced carrots with 2 tablespoons of olive oil, salt, and black pepper. Spread them out in a single layer.

Roast for about 25-30 minutes, or until tender and slightly caramelised, stirring halfway through. Let the vegetables cool to room temperature.

Prepare the Dressing:

In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, dried thyme, honey (or maple syrup), salt, and black pepper until well combined.

Assemble the Salad:

In a large bowl, combine the roasted beets and carrots. Add the chopped parsley and toasted walnuts.

Drizzle the salad with the dressing and toss gently to coat all ingredients evenly.

Add Cheese (Optional):

If using, sprinkle the crumbled goat cheese over the top of the salad for added flavour and creaminess.

Serve:

Serve the salad at room temperature or chilled. It can be enjoyed on its own or as a side dish.
