  • 1 tablespoon olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 1 teaspoon turmeric

  • 1 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • 1 cup diced tomatoes (canned or fresh)

  • Salt and pepper to taste

  • Juice of 1 lemon (optional)

  2. Add carrots, celery, and sweet potato. Cook for 5 minutes, stirring occasionally.

  3. Stir in turmeric, cumin, smoked paprika, and bay leaf.

  4. Add lentils, broth, and tomatoes. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils and vegetables are tender.
