Seasonal Recipes: Enhance Your Autumn Energy




Roasted Root Vegetable Medley

Ingredients:

  • 2 large sweet potatoes, peeled and cubed

  • 3 large carrots, peeled and chopped

  • 2 medium beetroots, peeled and cubed

  • 2 tablespoons cold pressed extra virgin olive oil

  • 1 teaspoon rosemary (optional)

  • Celtic Salt and crushed black pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).

  2. Toss the cubed vegetables in the olive oil, and season with rosemary, celtic salt, and pepper.

  3. Spread them evenly on a baking sheet and roast for 35-40 minutes, or until tender and golden.

  4. Serve as a side dish or over quinoa/rice for a grounding and nutritious meal.



Healing Mushroom Soup

Ingredients:

  • 2 cups of mixed mushrooms (shiitake, cremini, or button)

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 tablespoon extra virgin olive oil or coconut oil

  • 1 teaspoon thyme (optional)

  • 4 cups vegetable broth or bone broth

  • Celtic salt and pepper to taste

Instructions:

  1. Heat oil in a large pot and sauté the onion and garlic until soft.

  2. Add the mushrooms and cook until they release their moisture and become golden, about 5-7 minutes.

  3. Add thyme, vegetable broth/bone broth, celtic salt, and pepper, and bring to a simmer.

  4. Let it simmer for 15 minutes. Blend some of the soup if you prefer a creamier texture.

  5. Serve warm, garnished with fresh herbs like parsley.



Spiced Sweet Potato and Cinnamon Muffins

Ingredients:

  • 1 cup mashed sweet potato

  • 1 ½ cups almond flour (or regular flour)

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • 1 teaspoon fresh grated ginger

  • 2 eggs

  • ¼ cup maple syrup or honey

  • ¼ cup coconut oil, melted

  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.

  2. In a bowl, mix the mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract until smooth.

  3. In a separate bowl, combine the flour, baking soda, cinnamon, nutmeg, and ginger.

  4. Gradually add the dry ingredients to the wet mixture, stirring until fully combined.

  5. Spoon the batter into the muffin tin and bake for 20-25 minutes, or until a toothpick comes out clean.

  6. Let cool and enjoy a cozy, spiced treat.


These recipes combine grounding root vegetables, immune-boosting mushrooms, and warming spices to nourish both body and soul, perfect for the cooler autumn months.
